Pan-Seared Bone-In Pork Chop with Garlic Herb Butter

A golden-crusted, tender pork chop seared in ghee and finished with a fragrant garlic-herb butter for restaurant-quality flavor at home.

Ingredients

  • 1 bone-in pork chop (8–10 oz, pasture-raised preferred)

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ¼ tsp smoked paprika

  • 1 tbsp ghee or tallow (for searing)

For the Garlic Herb Butter:

  • 1 tbsp grass-fed butter

  • 1 clove garlic, minced

  • 1 tsp fresh thyme or rosemary, chopped

  • Squeeze of lemon juice


Instructions

Step 1: Season the Pork Chop

  1. Pat pork chop dry with paper towels.

  2. Season both sides with salt, pepper, and smoked paprika.

  3. Let it sit at room temp for 10–15 minutes for even cooking.

Step 2: Sear the Pork

  1. Heat a cast iron skillet over medium-high heat until hot.

  2. Add ghee or tallow. When shimmering, place the pork chop in the skillet.

  3. Sear for 3–4 minutes per side without moving, until golden brown.

  4. Lower heat slightly and continue cooking until internal temp reaches 140°F (carryover will bring it to 145°F).

    • Total time: about 8–10 minutes, depending on thickness.

  5. Transfer to a plate to rest for 5 minutes.

Step 3: Make Garlic Herb Butter

  1. In the same pan, add butter and minced garlic; sauté for 30 seconds.

  2. Stir in thyme or rosemary and a squeeze of lemon juice.

  3. Pour the melted butter over the rested pork chop.


Serve With:

  • Roasted sweet potato wedges with smoked paprika

  • Sautéed garlic spinach or grilled asparagus

  • Or pair with a simple cucumber-tomato salad for freshness
